Pecan Pie Bar Cookies

Ingredients

• Crust:
• 2 cups flour
• 1/2 cup butter
• 1/3 cup sugar
• 1/4 tsp salt
• Filling:
• 2 eggs, beaten
• 3/4 cup sugar
• 3/4 cup corn syrup
• 2 tbsp butter
• 1 tsp vanilla
• 1 1/4 cups pecans; coarsely chopped

Steps

1. Mix crust ingredients until crumbly and press firmly into bottom and up 1/4" up the sides of a 9" x 13" pan. Bake at 350 degrees for 15 minutes or until golden brown.
2. Combine eggs, sugar, corn syrup, butter and vanilla. Mix until well blended. Stir in pecans and pour over crust. Spread evenly. Bake at 350 degrees for 20 minutes or until filling is set around the edges and the center is slightly firm.
