Smothered Chicken

Ingredients
- 6 boneless, skinless chicken breasts (6–8)
- salt and pepper to taste
- 1/4 cup olive oil
- 1/4 cup butter
- 1/4 purple onion; cut in small chunks
- 1/2 each of red, yellow, and green peppers, sliced in small chunks
- 1/2 cup mushrooms (optional)
- 1/4 cup flour
- 2 cups chicken broth (or 1 can plus enough water to make 2 cups)
- 8 oz Monterey Jack cheese,; grated
Steps
- 1. Slice peppers and onions.
- 2. Wash the chicken breasts, pat dry. Season to taste with salt and pepper. Heat oil in a large skillet over high heat. Brown the chicken, burning when necessary. Transfer the chicken to a 9" x 13" baking dish.
- 3. Melt butter; saute onions and peppers until soft, lightly colored and slightly browned. Stir in flour and mix well. Add broth and stir constantly. Bring to a boil. Reduce heat and simmer 2-3 minutes.
- 4. Pour sauce over chicken; cover and bake in a 350 degree oven about 20-30 minutes, or when chicken is cooked through. Grate Monterey Jack cheese over top and bake another 5 minutes.
